Hi Deirdre,
I, too, am a chutney maker, but my Madhur Jaffrey's Indian Cookery (BBC 1982) does not have these recipes. Like you, I only use recipes as a starting point and vary it according to what is in season or in the pantry, or to taste.
I did not know raisins contained pectin. I thought they might aid thickening just by absorbing water.

BTW, did you ever see Madhur J in "The Assam Garden" ?
